Ya'll Come Back Pineapple Ritz


You owe it to yourself to try this at least once. It is perfect for brunch or served with a chicken casserole or grilled pork loin. Of all the side dishes I serve, this one always gets raves and requests for the recipe. We call Ya'll Come Back Pineapple Ritz.
2 large cans chunky pineapple (drained – save some juice)
1 1/3 cups sugar
6 tablespoons self-rising flour
2 cups fresh grated havarti cheese
Topping
3 cups Ritz Crackers, crumbled
1 stick butter, melted
Drain pineapple, reserving 3-4 tablespoons juice. Combine flour, sugar and stir in reserved pineapple juice. Add cheese and pineapple chunks. Mix well. Spoon mixture into a greased 8 x 11 quart casserole. Cover with crackers and pour butter over the top. Bake 325 degrees for 45 minutes to one hour, until lightly browned on top and bubbly. Of course you can decorate the top with pineapple slices or whatever if you like.
