Champion French Coconut Pie


One of Janet Lee's very old recipes was the Champion Pie of the West Tennessee State Fair. Janet has won "Queen of the Kitchen" and just about every other mid South culinary award there is to be had. Her mother was one of those legendary school cooks who passed along her recipes and love of the kitchen to her daughter. That was just the beginning for Janet. What makes it even more spectacular is the fact that she is diabetic and never tastes to adjust her recipes. If Janet Lee ever invites you over for dinner, cancel whatever else you had planned and go - you'll be treated to regal Southern cooking and hospitality. I didn't know Janet at the time, but happened to have been a judge when this recipe won the Blue Ribbon, and I can tell you it's a keeper!

1 ½ cups sugar
1/3 cup buttermilk
Pinch of salt
2 Tbsp. melted margarine
1 Tbsp. vanilla
3 eggs, beaten
1 cup coconut

Mix all ingredients well. Pour into unbaked pie shell. Bake 45 minutes at 350 degrees until center is set. You can top with toasted coconut if you like.
