


Fats Domino’s Blueberry Crepes
Crepes
1 cup all-purpose flour
2 eggs
1/2 cup low-fat milk
1/2 cup water
1/4 teaspoon salt
2 tablespoons melted butter
Whisk the flour and the eggs together in a large mixing bowl. Slowly stir in the milk and the water. Add the salt and butter, and beat the mixture until smooth. If you have a crepe maker, you probably know what to do next. If you're not so lucky . . . heat a griddle or frying pan to medium. Give it a very light spray of cooking oil. Drop the crepe mixture onto the heated surface. Use about a 1/4 cup of batter for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. "Thin is in" when it comes to the layer of batter. Cook each side until the golden brown (about 2 minutes for side one -- batter will bubble; and 1 minute for side 2). Gently remove and place on a plate. Place waxed paper between cooked crepes to prevent sticking. This will make 8 crepes.
Sauce
2 cups berries
1/2 cup sugar
1 tablespoon cornstarch
1 tablespoon lemon juice
1 sliced banana
4 tablespoons vanilla ice cream
Put all topping ingredients into pot, stirring constantly until thickened. Last add sliced banana. Fill crepes with a very thin layer of vanilla ice cream. Fold over crepes and put warm sauce over filled crepes.
Blueberries, known as a super fruit for their high anti-oxidant properties, are one of the few fruits native to North America. Blueberries can be eaten fresh or used for jelly, jam, pies, muffins, pastries, or juice. Blueberry fruit is also low in calories and sodium, contains no cholesterol, and is a source of fiber. A major constituent of the fiber is pectin, known for its ability to lower blood cholesterol. Blueberries contain measurable quantities of ellagic acid, which has inhibiting effects on chemically induced cancer in laboratory studies. Blueberry juice also contains a compound that prevents bacteria from anchoring themselves to the bladder, thereby helping to prevent urinary tract infections.

And SURPRISE – here’s something I hope the Easter Bunny picks up for my basket. They are the cutest handmade art dolls. These whimsical little lovelies are soft sculpture, made of cottons, and knits, painted, dyed, dressed in one-of-a-kind outfits. Their creator, Karen Kline of Florida, is a cartoonist with a background which includes artwear, costumes, and children’s murals. Libby, I see you also post for Blue Monday! What an adorable post with a BLUE RECIPE! ;) The dollies are adorable too... I love the recipe and hope to try it for my guests this summer. I make a German Pancake that is really cool and you bake it in the oven in an iron skillet and it reminds you of a crepe. I also make French Pancakes, which again resembles crepes.
