
The simple blend known as pimento cheese is the epitome of comfort food. It is so ingrained in the lives of most Southerners that it’s hard to imagine that it exist only in the South. A pimento cheese sandwich on white bread (usually with the crust cut off) has long been a staple of any table south of the Mason Dixon line, at picnics, church pot luck suppers, or as funeral food. This authentic Southern delicacy has been around since the beginning of the 20th century and every good cook has their own recipe. If you aren't familiar with jars of pimento, it's just roasted red pepper - remove the chared skin and use about half the pepper or to taste. Oh if you've never tasted this legendary concoction, honey child you owe it to yourself!
Southern Pimento Cheese
8 ounces extra sharp cheddar
8 ounces American cheese or white cheddar
1/2 cup mayonnaise
2 ounce jar of whole pimentos
1 1/2 teaspoon Worcestershire sauce
Dash of onion powder
Dash red pepper
1/2 teaspoon sugar
Blend pimentos and cheese in food processor until well blended. Add dry ingredients and mayonnaise and blend. Last add Worcestershire sauce. Add more mayonnaise as needed for preferred consistency. Scrape sides of bowl to ensure well-blended texture.
Cooked Pimento Cheese
2 tablespoons sugar;3 tablespoons mayonnaise;1 small jar pimentos, chopped; 2 tablespoons butter;1 tablespoon sweet pickle juice;1/4 cup milk;1 pound Velveeta cheese
Combine in medium saucepan, all ingredients except pimentos. Cut cheese into small blocks and let melt over medium heat with other ingredients in saucepan. When cheese is melted combine pimentos with mixture. Stir and store in the refrigerator.

Mindreader!!! I swear this is eery but in a good way! I was JUST talking today with the hubby about pimento cheese sandwiches. At least once or twice a month growing up - the family would cram into the family truckster & visit Asheville NC & Mom would always bring along pimento cheese sandwiches for the 50 minute drive. Well today we were chatting about visiting Asheville to attend some neat festivals this summer & I had just said - "well we can't go unless we have a good pimento cheese recipe". Talk about good timing! Libby you are such a peach!!

My fave afternoon treat is P-cheese on Ritz crackers. I am on Atkins, and made the Atkins friendly version. It was just as yummy!

You are speaking to my southern, West Tennessee heart!!! One of my very favorite foods ever!!! It is my whole fam's favorite picnic, along with my mother's fried chicken. Sometimes we have this for supper in the summertime, with sweet tea, of course!!!
I also take this when I need to carry food to the bereaved!!!

Oh my! I love this cheese -- we live in NJ but when we vacation south of the Mason Dixon line, I make a beeline for the local market and pick this up.
But now -- with a recipe -- I can make it right here in New Jersey. Hooray!

I may be the only one who has never heard of this, but it sounds so simple and tasty. I know of pimentos, but have not heard of them combined with cheese. I can see it spread on thick slices of toasted bread. Yum. Thanks!

We Texans love our pimento cheese!!! It's hard to believe there are people who have never had this southern delicacy;)!!! When I was younger we ate it with fritos...so fancy!!! I usually just buy it but thanks to you I am going to give it a whirl or should I say TWIRL!!!

I am a yankee who lived in the south for 12 years and I LOVE pimento cheese - - - nope, can't get it up here.
Make sure you tell your readers who aren't from the south that when the recipe says "mayo" in MEANS "mayo" and that Miracle Whip isn't the same thing.
After living in the south, I can't STAND Miracle Whip.
I love it! The cooked version is just like the kind my grandmother made! I still love it to this day on toast, crisp toast, for breakfast. Thank you for sharing.

Well...I just love pimento cheese!!! Believe it or not...the folks here in Colorado actually make pimento cheese! Hehe!!! And...coming from Texas, I've always considered Coloradoans as yankees...but these yankees like their pimento cheese! hehe!
I'm so glad that you shared your recipe...I'd love to try it with the white cheddar! Sure would make it pretty with some white sprinkled in! Also...I have never, ever heard of baked pimento cheese...it sounds scrumptious and I'll have to give it a try!

Yum Twirlly----It's not nearly time for lunch--but your Southern Pimento Cheese sounds terrific. My mother used to make the best home-made 'menter' cheese in the entire planet... Of course, her daughter didn't ever get her recipe---so I'm going to try yours to see if it's anywhere near as good! It sounds wonderful!!!!! I love CHEESE --anyway I can get it!!! ha

Thank you for visiting my new blog. I loved this newest post of yours and know very well that us southern gals MUST have our pimento cheese. I came across a little different pimento cheese recipe from a new cookbook I have bought recently. The name of the book is Magnolias and the author owns a restaurant by the same name in Charlston, NC. I've read that this restaurant is fabulous. This is a recipe I plan to try soon just to see if I like it as well as the one I have made my whole life. I will share the recipe but will probably go back to the one I love just like yours. Oh that sounds so good...we always had pimento cheese and tuna fish sandwiches when we were small. Pimento cheese was my favorite and of course potato chips and a coke.
