Simply Dijon Delicious Darling!


4 boneless chicken breasts, skinless
¾ cup Dijon mustard (whole grain)
¼ cup Honey Mustard
¼ cup oil
1 tablespoon onion powder
1 tablespoon brown sugar
1 tablespoon honey
1 teaspoon minced tarragon
1 tablespoon lemon juice
Salt and pepper to taste
1 clove garlic, finely minced
Mix everything except the oil and chicken. Whisk the oil into the mixture and spread mustard mixture over both sides of chicken. Marinate at least 4 hours in refrigerator, or overnight.

BREADING
2 tbsp chives, chopped
Salt and pepper to taste
Pinch of Cayenne pepper
1/3 cup Parmesan cheese, fresh shredded
1 1/2 cups French’s Fried Onions, crushed
6 crackers, crushed
2 tbsp melted butter
Mix all breading ingredients except butter. Dip marinated chicken into breading. Gently press coating onto chicken. Place chicken in single layer on a rack on a foil covered sheet pan. Drizzle butter over the chicken. Cover and refrigerate one hour to set breading. Bake at 350 degrees for 30 minutes. (Longer if breasts are thick)

Hello Libby. I have a recipe that is similar at least at the beginning with the mustard, honey and tarragon. You have taken it to a new level with coating. I know my pickiest eater..a grown man/son will even enjoy this version.

Yum, Libby.... I copied and pasted that recipe --so that I can print it out. Sounds wonderful.. You are quite a gourmet cook... How did you find time with all of your busy life to learn to cook so elegantly????? You must be really good at multi-tasking... I'm impressed.
