Southern Spring Brunch Buffet



M E N U
Cheese Straws
Pimento Cheese Tea Sandwiches
Bacon Wrapped Barbecue Shrimp over Creamy Stone Ground Grits
Spring Asparagus Spear Wraps
Fresh Strawberries
Avocado Crostini
Jack Daniels Smoked Pork Tenderloin
Corn Light Bread with Tomato Marmalade
Chess Pie
Poire William Ice Cream and Ginger Tea Cakes

Old Fashioned Chess Pie
1 cup granulated sugar
1 cup light brown sugar
1/4 cup sifted flour
1/2 teaspoon salt
4 eggs, (3 divided, 1 whole)
1/2 cup butter
1/2 cup milk
1 teaspoon vanilla extract
1 unbaked 9-inch pie shell

In a saucepan, combine the granulated sugar, the brown sugar, milk, flour, and butter; heat, stirring, until dissolved. Cool. Beat 3 egg yolks and 1 whole egg; add vanilla and salt. Combine with cooled mixture and blend well. Pour filling into unbaked pie shell. Bake for 35 to 40 minutes at 350°. Lower temperature to 250° to finish baking. When pie is done, it will be puffy across the top. Remove from oven, allow to cool.

Spring Asparagus Spear Wraps
Spread a mixture of cream and blue cheeses onto crust-less sandwich bread, then wrap around an asparagus spear, lightly coat with melted butter, and then bake at 300 degrees until golden brown. Great to have on hand in the freezer and pop in the oven for unexpected company.

This post has made me so hungry!! Yes, I heard about the new Memphis b'ball coach. He was getting crucified on Sports Talk Radio in Knoxville. They called it "career suicide". I hope it works out for him since everyone thinks he will fail. What do you think? Have a great day!!

Your tablescape is perfection...as always!!! The menu is superb!!! I think you must have been reading my mind...I have spent half the day looking for my chess pie recipe to make for Easter!!! Now I can give up and use yours...I'm sure it is better anyway...knowing you!!! It's my lucky day...I'll let you know if it passes the family's taste test!!!

I've always heard of of Chess pie, and have never taken the time to look up the recipe. Is it similar to the pecan pie but without the pecans? I think I'll give it a try!

Oh my what a beautiful spring tablescape! I'm hungry...can I come over for brunch? I really envy people who can cook. I love to entertain but cooking is not my forte'. I wasn't allowed in the kitchen growing up! I don't blame my mom .....she had five kids to feed! The asparagus and pie sound delicious! You not only design a menu you create a lovely table too! Wonderful! Luanne

What a beautiful table. I love the china. What pattern is it? Do I recognize the Towle hotel stainless? It is my absolutet favorite. I think it looks like sterling.
