Spearmint, Roses and Strawberries in Bloom




Today my first knockout rose bud opened and the bushes are loaded. These roses are a hardy shrub rose bush that will bloom into the early fall. I have five bushes of the double knockouts in one area that were pruned back to five feet tall and are laden with hundreds of buds. These roses are easy to grow and are one of the most disease resistant roses on the market. The full double flowers look just like a classic rose.
Also the strawberries are in bloom. The 72 Annual West Tennessee Strawberry Festival takes place the first of May when we celebrate the harvest of the sweet berries that have been growing here for a hundred years. Oh the jams, cakes, shortcakes, pies and breads that will be made when they ripen.
Finally the spearmint plant that I've had for over five years is green and full after a restful winter. It will make the best juleps that we will sip as we watch the Kentucky Derby and of course, it's always good in iced tea in the summer and a must for the ever popular mojitos.

Strawberry Cake
A moist cake, easy to make and sure to be a crowd pleaser!
½ cup water ½ cup Wesson oil
3 eggs 1 box yellow or butter cake mix
1 small box strawberry Jello 1 pkg frozen strawberries, drained
(reserve juice for icing)
Combine Jello, eggs, water and oil with cake mix. Beat on high for two minutes. Add strawberries; mix well. Pour into a greased sheet cake pan. Bake at 350 degrees for 30 to 35 minutes.

Icing
1 box confectioner’s sugar
1 stick butter, creamed
Reserved berry juice
Cream butter well with mixer; do not melt. Add butter to sugar. Add berry juice as needed to obtain spreading consistency. Beat on low speed until well blended. Ice cake and allow to set.

Hi Libby, Someone else who blogs was talking about those roses. I've never hard of them--but it sounds like they are gorgeous. We grow roses --but the old-fashioned ones, hybrid teas.

I can't wait 'til the TN strawberries are ready to eat. They are SO delicious...

Hi, Libby, I too have spearmint and peppermint plants, and they do make great drinks, tea too. My mother loves roses. Send me some more pictues and any helpful hints for her. She had to give her rose garden up because of my deer babies...! That was hard on her...but she knows how much I love those deer.

Hi Libby,
That strawberry cake looks so good, thank you for the recipe. The rosebush is lovely, perfect color too. How about a little spearmint, orange, lime and a very tiny bit of cucumber for the hot summer months. I love that cool water when it's in the 100s here. I can never get my strawberries to grow here, maybe I'll try again after seeing all your blooms. Do you have a secret to success?

I love strawberry season...we are also very close to that time, I can't wait for all the goodness they bring!

I love the rose bush! If I were to go to a nursery,is "Knockout" what I ask for??

My daughter and I are looking for the double knockout roses, which we just heard about a year ago; yours are gorgeous! We had classic roses in Atlanta and I got tired of all the maintenance. Sometimes, I was in the rose garden with a fly swatter to the Japanese beatles who just ignored the traps I had set!

Hi LIbby. I noticed you started following my blog today so this is my response to your request to hear from your readers! Strawberries...yum! I just ordered the sweetest clay beads for a bracelet I'll be making and the artist puts the most finite detail into her designs...I can hardly wait!

My sis and her family own a guitar shop in Arroyo Grande, CA and they always love participating in the village's annual strawberry festival. A Japanese family there used to own rambling fields of the fruit, and you could pull off the main drag & buy them right on the sidewalk, but alas, over the years they were forced out, field by field to housing developers.

But they are still around, thus the festival!

In your recipe I particularly like the berry juice in the icing...great idea.
