Garden's Pink Roses Tablescape with Strawberry Cheesecake Ice Cream

Strawberry Cheesecake Ice Cream
1 pint strawberries with ½ cup sugar
¾ cup strawberries chopped
8 ounces cream cheese, softened
3/4 cup sugar
1 teaspoon vanilla
1 cup milk
1/8 teaspoon salt
¾ cup heavy cream
Coarsely chop the pint of strawberries and in a blender purée with all remaining ingredients except cream and remaining ¾ cup berries just until smooth. Stir in cream and chopped berries and freeze mixture in an ice-cream maker. Transfer ice cream to an airtight container and put in freezer to harden. Ice cream may be made 1 week ahead.

English author, poet, philosopher, bureaucrat, courtier and diplomat, he is best remembered for The Canterbury Tales and often called the father of English literature.

My wish is that we will all take time to smell the roses and gather friends thoughout life that form gorgeous bouquets which we will cherish and enjoy.

Yesterday I planted more roses along our fences and chose two favorites which are producing in other areas of the yard. Roses are like old friends who come to visit you every year. With a little care and attention, they will be around for a long time for you to enjoy.
The Abraham Darby Rose is an apricot colored rose. It resulted from the crossing of a climber and a floribunda. I really love the abundant huge blooms and strong fragrance. It’s a study bush that will reach 5 feet rather quickly and is hardy even in cooler climates than we experience here. I’ve heard that the cooler the weather, the more likely it is to have a soft pink with yellow center and in warmer climates, it can be an apricot color. Of all the English roses, this is one of my favorites. We have it planted along fence rows and it’s magnificent. Just spray it for bugs every couple of weeks, make sure it gets plenty of sunlight, and watch it grow.
The Pink Double Knockout Rose blooms from early May until the first frost. They are a study landscaping bush full of blossoms and don’t require the care and attention that most roses demand. I have planted them along the fence row and they are just gorgeous and grow upwards to six feet and spread depending on space. If you aren’t a rose enthusiast but would love to try your hand at growing roses, this one is for you.

Hi, darlin' friend,
it is sometime uncanny the way our lives run...I, too, planted 2 Double Knockouts yesterday, 2 French Hollyhocks and a Red Knockout. I have an apricot colored rose (don't remember the name) that I've had for years. We had to transplant it last year and I am not sure it is going to make it. I love roses..especially the Knockouts..as you said, so easy to grow.
As usual,I enjoyed your post very much..

Oh my can you really sit out in the garden. We have rain again and it is far to cold. On the plus side the plants are growing in leaps and bounds. Soon irises will open their buds. My purple ones smell exactly like grape juice.

Hi Libby, We're home from the beach (think I sent you an email)--and had a wonderful time. Hope things are going well with you there in Jackson..

I love roses also--and luckily have a hubby who loves to grow them. We grow the hybrid tea roses (ones that are fragrant)--so hopefully we'll have many blooms soon. Our first one has bloomed (Rio Samba). You'll have to check out my blogs.

I love your roses, so beautiful and healthy! Your little table is so wonderful set in that fabulous garden with the red brick! It looks so soft and feminine and just pops from the setting, but at the same time draws your eye to the pink roses. Can't wait to see more; when does your book come out?

I am going to make your ice cream this summer. I just took my ice cream maker to the beach house and make ice cream 3 times a week. I have made blueberry with cream cheese so strawberries with cream cheese sounds interesting too.

McDonald, TN is 18 miles north of Chattanooga. A town so small you won't realize you have gone through it-no sign, nothing. We are only 3 miles from Cleveland, a bit larger and well known :-)

Libby, these roses are loveliness personified! I'm glad to know this about the double knockouts (the color is exquisite). I have a lot of chemical sensitivities, and I can't handle spray. So knockouts have worked well for me for that reason. I will remember that about the double knockouts.

I love roses best when they are full and lush, just as the petals are about to fall, like one of the tablescapes in an Old Master painting.
