







Set your table with herbs for a surprisingly wonderful scent at dinner. Select a mix of your favorite aromatics and pair them with fuits, vegetables, flowers or let them stand alone. It adds such a fresh dimension to your tablescape. Now my herb garden is full of lush spearmint, peppermint, parsley, lavender, sage, chives, dill, tarragon, thyme, oregano and rosemary. Experiment with the different fresh flavors and cook with them for an added bonus to any recipe. I've listed a few of my many recipes using fresh herbs.
Roasted Rosemary Lemon Chicken
Crispy Crostini with Pesto
Dill Dijon Potato Salad
Potato and Parmesan Basil Gratin
Green Beans with Chives and Pancetta
Mixed Greens with Key Lime Pesto Vinaigrette
Smoky Gouda Grits with Chives & Barbecued Shrimp
Grilled Beef Tenderloin with Bernaise Sauce
Ravioli with Brown Butter and Sage
Crepes with Basil Mushroom Stuffing
Garlic Rosemary Bread
Grilled Slices of Baguette with Chive Butter
Island Grilled Pork Roast with Thyme Mustard Sauce
Spearmint Sweet Iced Tea
Herb Butter and Cheese
Herb butters add the full flavors of fresh herbs to dishes. Use on sandwiches, to add zest to meat, fish, and veggies, especially mushrooms, onions, peas, potatoes, tomatoes, and zucchini. Make herb cheeses by substituting soft cheese for butter. To make herb butters beat four tablespoons of chopped, fresh herb into 8 oz. of soft butter until smooth. Beat in the juice of one lemon and add salt and pepper to taste. Chill. These can also be frozen for later use. Using the above recipe, I like to combine Italian herbs (oregano, thyme, parsley) with the basil. I beat in some olive oil, fresh, minced garlic, and parmesan cheese. This butter spread on Italian bread and grilled until lightly brown under the broiler makes a scrumptious garlic bread to accompany any meal.

What delicious foods, and I love your tablescape. I particularly like that elegant Flora Danica juxtaposed against the grey of the wood and the natural centerpiece. I love the toadstools and moss. And is that lemon grass or rye in those crystal compotes? Lastly, I love what you've done with the napkins with that fernlike tendril (I can't see it well, but that is what it appears to be, and it's perfect). This is a fabulous table with every detail.

Oh I am so trying to learn to cook with different herbs and spices. They do so much to really punch up a recipe. I love herb butters, they are just wonderful, especiall with sourdough baguettes. I have missed you!! I don't know if you have been on hiatus or if I didn't see you on my blogroll. But anyway, good to be here!! I can't believe all the herbs you grow!! Because of space in my wee little house and garden, I have a "backdoor" herb garden with oregano, basil, chives and thyme. And those are the herbs I use the most.
I have made herb butters, oh gosh, so delicious!! I never added lemon juice so that will be a new idea.
I love the recipes you listed. Do you have them hidden somewhere??

Having a supply of herb butters in the freezer is such a smart thing to do. They are so versatile and just the right thing to top off your dish with.
Oh, I can just about smell all those herbs! My favorite is sweet basil, and of course mint!

Gorgeous pictures! Love that table setting too. With two small children, I'm lucky if our table gets wiped in between :). This could be easily tweaked into a kid-minded herb table though. Thank you for the inspiration!
I love the herbs my wife plants every year! We were just discussing last week the fact that our food is so much flavorful in the summer because of "cooking from the front yard" where our spices hide in fear from me;)
