Pumpkinscape display at the University of Tennessee Research Center in Jackson TN. A thousand pumpkins of many varieties create this autumn landscape

Bodacious Chili
1 tablespoon vegetable oil
1 smoked link sausage, cut into 1/4-inch pieces
1 ½ pounds ground beef
2 cups chopped yellow onions
1 tablespoon minced garlic
2 tablespoons chili powder
½ teaspoon each – paprika, cayenne pepper, oregano, thyme
2 tablespoons onion powder
1 tablespoon salt
1 tablespoon chicken base
2 teaspoons ground cumin
1 (12-ounce) bottle dark beer
1 (28-ounce) can whole tomatoes, crushed, and their juices
1(14.5-ounce) can chopped tomatoes
1 small can chopped chili peppers
1 package chili seasonings
1 tablespoon sugar
1 (27-ounce) can chili kidney beans with juice
Salt and freshly ground black pepper
1 cup grated cheddar cheese, garnish
1 cup finely chopped green onions, garnish
1 cup sour cream
In a large heavy pot, heat the oil over medium-high heat. Add the ground beef and onions, cook till browned. Add the sausage, chicken base, garlic, chili powder, salt, spices, chili seasonings and cook, stirring often, 15 minutes. Add the beer and cook about five minutes, bring to low boil.
Add the tomatoes, sugar, peppers and chili beans to the pot. Stir well and bring to a boil. Lower the heat to medium-low and simmer, uncovered, for an hour or longer, stirring occasionally to prevent the chili from sticking to the bottom of the pot. Season with salt and freshly ground black pepper, to taste. You may thin with water to your taste.
To serve, ladle into bowls. Sprinkle each serving with grated cheese, sour cream, green onions, and serve hot with corn chips or crackers.

What a stunning array of pumpkins and squash... thanks too for the chili recipe. I've never added beer to mine - sounds good!
Mmmm homemade chili! Sounds good. The picture of all those pumpkins is beautiful.
The pumpkin scape is just unreal. I love it. The chili sounds sooooooooooo good. I just may have to make some. Hugs, Marty
I love all the pumpkins, but I would really love a bowl of that chilli. We are almost getting cool enough to make a big ole pot.
That sounds so delicious, Libby, and it's just perfect for a chilly evening. Love the fall landscape you shared. Just got back from Whole Foods, and they had lots of pumpkins, hay, and mums out front. I like those and cornstalks in fall decorations...
XO,
Sheila :-)
Oh, are we still wishing Senator a Happy Birthday? If so, count me in.
:)

Be a sweetie,
Shelia;)
I want to try this when I get back from NC. My chili is never that good. This looks nice and thick and sounds really tasty. Gotta love the beer, too. Drink one, use one...LOL
:-) Sue
Wow, what a spectacular pumpkinscape! Are those tall green "things" to the right of the footbridge ZUCCHINI? LOL!

Your Chili looks really yummy. I think there is no meal that is more honest than a heartwarming chili.

First of all, happy birthday Senator.
The pumpkin patch is a beauty. I'm always looking for a new chili recipe and this one sounds terrific with the beer.

Good morning! Fall is my favorite time of the year and your post reminds me of just why! I think I was in a travel industry professional group with a woman from Jackson .... can't recall exactly but maybe her name was Chris Mize?
Beautiful pumpkin display! The chili sounds so good - now I am hungry. Beautiful weather today - have a great day.
I hope that The Senator is as eagerly awaiting his Halloween birthday as we are with your wonderful celebration giveaway! Now I would say -- that Tennessee KONWS how to do a pumpkin display! Stunning! I made Chili for tonight - we're having wet and cold weather - perfect chili weather - but I must say - your recipe does look bodacious! Next time - I'm making yours!
Wow what a wonderful display of pumpkins and gourds. Recipe sounds so good for a day when you come in from yard work or for tailgating at a local football game.
