My cousin, Judy Goforth Hutchings is a great cook and with a kitchen full of children and grandchildren, she knows how to cook up the sweet treats! Try these favorites. The dirt cake could be a cute Halloween dessert that you could decorate with lots of creepy jelly worms and bugs etc.
Chocolate Cream Cheese Cake
1 cup chopped pecans
1-1/2 cups coconut
1 box German chocolate cake mix
1 box confectioner’s sugar
1 8 oz. pkg. cream cheese
1 stick soft butter
Spray bottom of 9x13 pan. Spread coconut and nuts in bottom of pan. Mix cake mix by directions on package and pour over coconut and nuts. Combine confectioner’s sugar, cream cheese, and butter. Spoon over cake mix before you bake it. Bake cake for 1 hr. and 15 minutes (at least – is usually longer!) at between 300 and 325 degrees.
Coconut Cream Cake
1 Butter-Yellow cake mix
Prepare cake per directions on box. As soon as it is removed from oven, “poke” holes in top of warm cake and pour over cake.

After liquid has been absorbed, cool cake in refrigerator, covered, until cold. Top with Cool Whip (thawed) and 2 package frozen coconut (thawed).
Dirt Cake
1-1/2 packages of Oreo cookies
1/2 stick margarine
8 oz cream cheese
1 cup powdered sugar
3-1/2 cups milk
2 pkgs. instant French Vanilla Pudding
12 oz. whipped topping
Crush Oreo cookies in large bowl and set aside. In another large bowl, cream together with a mixer the margarine, cream cheese, and powdered sugar; set aside. In a third large bowl, mix together the milk, pudding, and whipped topping. Add this to the cream mixture and mix until smooth and thick. Get a big serving bowl and put one layer of the Oreo cookies at the bottom. Pour on top a layer of the pudding mixture. Top with another layer of Oreo cookies. Keep alternating layers of pudding mixture and cookies, ending with a layer of the cookies on top.

I grew up in the south but I'm not familiar with dirt cake. My Yankee husband would love it since it contains Oreos. You're right - it would be perfect for Halloween.
