This weekend we attended a community potluck supper for a dear friend who is campaigning for office in Tennessee. There were 9 or 10 tables of food that were replished as almost 1,000 passed through the lines. My mother took these brownies and the went first! People hunted her down for the recipe. If you like chocolate and peanut butter, these have your name on them!!!!
Gary Morris, who performed at the event, declared them - "_______" - probably don't need to put his description in print. Of course his performance of his signature song "Wind Beneath My Wings" along with "Bring Him Home," the prayer from Les Mis, which he sang on Broadway were show stoppers too! Grilled Halibut in Tarragon Lemon Dijon and CHILLED Concannon Rose - A SUMMER NIGHT'S DREAM DINNER

Oh what a glorious day. Fish was caught off the coast of Alaska and in Memphis within 12 hours and on my table the same day. A friend brought me a package of halibut on ice and a bottle of a wonderful new wine to try yesterday. Does it get any better than that. So after a long day planning two twirls - one political and one charitable - it was a bath and out to the grill about 7:30 to grill up this divine delicacy. The halibut is so perfect, the best texture and taste. I think it's my favorite fish, even though I really like sea bass, talapia, and even catfish. I hope you will try this and if you can't find the halibut, use your favorite fish suitable for grilling!
1/2 cup fresh lemon juice
1 tablespoon minced lemon zest
1/4 cup Dijon mustard
3 tablespoons finely chopped fresh tarragon
3 tablespoons finely chopped fresh chives
1/3 cup olive oil
Fresh cracked black pepper and kosher salt to taste
6 6-8 ounce halibut fillets

Combine the lemon juice, lemon zest, mustard, tarragon, and chives in a small mixing bowl slowly whisk in the olive oil until well blended. Add the salt and pepper to taste for seasoning.
Arrange the fish pieces in a large, shallow glass dish. Pour the marinade over, coating all the pieces evenly. Marinate 1/2 to 2 hours.Grill on medium heat about 3 inches from flame for 7-9 minutes per side or until done if filets are thicker. Garnish with lemon slices and parsley.
Serve immediately with asparagus that has been grilled or roasted in the oven and Concannon Vineyards - Righteously Rose is a refreshing blend of predominately Rhone varietals. Corn on the Cob Rubbed Down with Mayonnaise, Seasoned and Baked - Yum Yum Yum - Just Try it once!

The doorbell rang about 7:30 this morning and a long time Murphy Tractor customer was there with fresh corn. He apologized for it being late but oh my - what a delight. Talk about a way to start the day with a surprise!

Try this - shuck your corn, clean, rub well with mayonnaise (use your hands for goodness sake)  then - sprinkle with kosher salt, fresh cracked pepper, chipotle pepper seasoning, and smoked paprika to taste. Roll up in foil and either cook on grill or in a 400 degree oven. Yum Yum Yum!!!

It's moist and has the best flavor. NO one ever guesses mayonnaise was in the mix! Be Cool! It was 103 degrees here today - way too hot for me. Sprinklers going on the flowers and yard, Senator (my white lab) won't even think about going outside to play for one minute, the AC hasn't shut off in two days!
