Tennessee Honey Corn Pudding - they'll scrape the bowl everytime

This Tennessee version of a corn pudding recipe I created has Jack Daniel's Tennessee Honey added to the ingredients. The results are peerless. Everytime I serve it, the dish is emptied and people want to know about that wonderful flavor. The alcohol cooks out in the 400 degree oven. Oh this is one of my favorites and I'm serving it tonight. You get to see it right out of the oven! Happy Twirls

5 large eggs
1/3 cup butter, melted
1 tablespoon sugar
2 tablespoons dark brown sugar
3 tablespoons Tennessee Honey (Jack Daniel’s Whiskey)
1 tablespoon orange juice
1/2 cup half/half
4 tablespoons cornstarch
2 (15.25-ounce) cans whole kernel white corn
2 (14.75-ounce) cans cream-style white corn
1 small green cayenne pepper, chopped fine (remove seeds if you want less heat which I do for guests)
1/2 teaspoon ground nutmeg
Dash onion powder
1/4 teaspoon sea salt
1/4 teaspoon fresh ground pepper
In a large bowl, lightly beat eggs; add half/half and beat. Stir in the remaining ingredients, adding the corn last. Blend well. Pour mixture into a buttered 2 quart casserole dish. Bake in a preheated 400 degree oven for one hour or until golden brown. Remove from oven and allow to sit for 10 minutes. Serve warm.

This sounds delish.....but can we omit the whiskey?

Libby Murphy said...

Of course you can omit the whiskey. It just adds a little caramel honey flavor as the alcohol cooks out. I hope you enjoy this recipe as much as we have.

Do you drain the whole kernel corn before you add it? I would think yes...but I just want to make sure. This would be a great side dish for holiday meals.

Thanks!

Libby Murphy said...

Yes Chip, you're correct. Hope you and yours enjoy as much as we do.

Looks amazing! How many does it serve?

Libby Murphy said...

Ashley, it just depends on how hungry your crew is - whether they get a spoonful or a BIG serving. Anywhere between 15 and 30. Hope you enjoy it as much as we have!

Is this a dessert or side dish? Thinking of using it for turkey day.

Libby Murphy said...

It's a sidedish at my house. I hope you enjoy this and let me know if your crowd likes it as much as mine do.

can you substitute a jalapeno pepper for the cayenne pepper?

Libby Murphy said...

sure substitute to your liking!

Silly question: Tennessee honey is just Jack Daniels right? No actual honey..... Ok everyone stop laughing - seriously is it? :) lol

Libby Murphy said...

Hi Juls
Yes it's the Jack Daniel's product known as Tennessee Honey. I bet there are some who made this using the bee made version of TN honey.

I'm very excited to be m making this for Thanksgiving! We don't ever have a corn side, but I think this will be a great addition and possibly a new favorite!

What is the texture like? Since it doesn't have any flour or cornmeal in it. Does it come out eggy?

Could you make this the night before and reheat it, or would it be best to mix everything together then just throw it in the oven the next day?
