2 cups flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1-1/2 cups vegetable oil
4 whole eggs
3 cups well grated carrots (takes one bag or less)
Grease two 9-1/2 inch non-stick cake pans. Mix sugar, flour, soda, cinnamon, and salt in a large mixing bowl. Add oil, eggs, carrots, and mix well. Pour into cake pans. Bake in a 350 degree preheated oven for approximately 35 minutes.
Icing
1 box powered sugar
1 stick butter, softened
2 teaspoons vanilla
Combine all ingredients and mix with a mixer until smooth. Ice cooled cake.
Patsy Camp appointed to Tennessee Arts Commission
Gov. Bill Haslam recently appointed Patsy Camp, previous board president and vice president of government relations and public relations for the Jackson Arts Council, to the Tennessee Arts Commission. Camp is a native Jacksonian, having attended Jackson City Schools and Lambuth University, where she earned a B.A. in art and art history, Summa Cum Laude. She has long been an advocate for the arts, as indicated by her service on several boards, including the Tennesseans for the Arts Board in Nashville and the Jackson Art Association. She was also the 2007 recipient of West Tennessee Healthcare Foundation’s Jackson Award in the category of “The Arts.” She lives in Jackson with her husband Charles H. Camp.
