OREO MUDBARS are Gooey Good

Last night I joined my mother and longtime friend, Lyda Kay Ferree, to join the culinary competition at the West Tennessee State Fair. As always Rose Ann Donnell and Carol Ann Watson did an exemplary job organizing and producing the event. This year Keri Dingledine helped and it went really smoothly and lots of tasty pork or beef appetizers, pork or beef entrees, and Oreo desserts were judged. As I don't have any of the recipes yet, I thought I would share one of my favorite Oreo recipes with you. You know this is the100th anniversary of Oreo cookies.
OREO® Mudbars
1-2/3 cups Oreo® cookies, crushed into crumbs
6 Oreo® cookies, broken into coarse pieces
1 stick butter, melted
1/4 teaspoon salt
1 can sweetened condensed milk
1 teaspoon vanilla extract
1/2 cup dark chocolate chips
3/4 cup milk chocolate chips
1/2 cup macademia nuts, chopped coarse

1/3 mini chocolate chips
1 cup white chocolate chips, melted
Line a 9" x 13" baking pan with foil, shiny side down, and spray with non-stick spray. Blend cookie crumbs, salt, and butter in small bowl. Press your cookie crumb mixture into the prepared pan.
In a double boiler, blend condensed milk, dark and milk chocolate chips, and vanilla. Stir until melted and remove from the heat. Pour your melted chocolate mixture over the cookie crumb base. Sprinkle the mini chocolate chips, nuts, and Oreo cookie chunks over the top of the filing. Press down gently into the chocolate topping.
Bake for 20-22 minutes in the preheated 350 degree oven. Cool the pan on a wire rack till warm to the touch, about an hour. Melt the white chocolate chips and drizzle over the top of the bars and chill in refrigerator for 2 hours. When ready to serve, use the foil to remove the bars from the pan and cut
intosquares. Store in an airtight container.

Carol Ann and Rose Ann begin the judging with appetizer selections. These two friends since school days have been involved with the West TN State Fair for many years and do a great job.
Keri Dingledine (on the left), whose family has long been part of everything at the fairgrounds, is truly a "Fair Baby," as today is her BIRTHDAY. She was one of the co-ordinators for the culinary competition.
