A Little Bite of Heaven in Every Bite - Old Fashioned Pear Preserves

Oh there is nothing better on a buttered biscuit than homemade pear preserves. It’s the smoothest of all fruits and there’s a little bite of heaven in every bite!PINTEREST
3 cups sugar, divided in half
3 cups water
8 – 10 medium pears (about 3 pounds)
Peel, core, and dice pears. If you peel several at a time, drop in a large bowl of water to keep them from turning dark. Combine 1-1/2 cups sugar and water; cook rapidly 2 minutes. Add pears and boil slowly for 15 minutes. Add remaining sugar. Stir until sugar dissolves. Cook rapidly until fruit is clear, about 25 minutes; stirring frequently. Cover and let stand for 12 – 24 hours in a cool place. Pack fruit into hot jars, leaving 1/2-inch space at top. Cook syrup longer is too thin. Pour boiling hot syrup over fruit leaving 1/2 –inch space at top. Adjust caps. Process in hot water bath at simmering temperature for 20 minutes

This is just like my Mama's pear preserves! Would it be possible to freeze instead of doing the water bath? Thanks for a great recipe!!!!

I'm not sure Mimi as I only made freezer jam once and I thought it tasted more like ice cream topping than old fashioned cooked preserves, so never tried it anymore. It was strawberry and not pear anyway. Good Luck!
