Boolicious Caramel Corn and Peanuts


Trick or treat for kids of all ages. You won't believe how good it is with champagne! It's BOOLICIOUS!
4 quarts popped corn
1 cup brown sugar
1 stick butter
1/4 cup corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon vanilla
1 cup salted peanuts (or sliced almonds, pecans, cashews, or none at all)
Mix popcorn and peanuts in a large bowl. Mix sugar, butter, syrup and salt; boil for five minutes and then add soda and vanilla. Pour over the popcorn/peanut mixture. Mix really well. Place on a sheet pan in a 200 degree (Do Not Preheat) oven for 45 minutes to one hour; make sure to stir every 15 minutes. Once the popcorn turns a dark brown, the popcorn is finished. Spread the corn on wax paper while it dries. Make sure that you allow the popcorn to cool before breaking it up. Once the caramel popcorn is cool and broken, store it in an airtight container to keep it fresh.
