Easy as Pie Blackberry Cobbler
This is one of those desserts that is just plain good. Serve warm with a scoop of good vanilla ice cream lightly dusted with cinnamon!
1 bag frozen blackberries (grocer’s freezer section)
Double pie crust, homemade or ready made
1 cup sugar (or to taste depending on tartness of berries)
1 tablespoon cornstarch
2 tablespoons butter, cut into pieces
2 tablespoons water
Thaw berries. Pour berries into a bowl; add water to the bag to get all the juice and fruit and add to the bowl. Stir in the sugar and cornstarch. Place one sheet of pie dough in the bottom of a casserole dish such as 8 x 8 which has been sprayed with non-stick oil. Spoon berry-sugar mixture over the dough; add butter, just scatter over the berries. Top with another later of pie dough. Bake in a preheated 350 degree oven for 30 – 40 minutes or until golden on top. Serve warm with ice cream. Lightly dust your ice cream with cinnamon or cinnamon-sugar.

I don't know how I stumbled upon your blog, but I am completely in love with it!!! All of your recipes are the exact foods that both my grandmothers in the Mississippi Delta used to make when I was a little girl. The one that surprised me the most is the fried honey bun. My Dad used to make those for breakfast!!! I thought I was the only person who knew about those!!!

I look forward to cooking many of your recipes in the upcoming weeks. First up: cheesy chicken and dumplings! Can't wait!!!

Hi Libby, I found a recipe in a book that I think is so similar to this a couple years ago. I made it twice and I loved it. I have some blackberries in the freezer. I will be trying yours this coming weekend. Thanks for sharing with Share Your Cup.
