Sit a Spell Chicken Dumplins Casserole
The first cool spell of the season called for a warm casserole for supper. Serve with lima beans and yum, just sit for a spell, enjoy talking and laughing with those around your table. It's one of those dishes that warms your soul.

4 cups of cooked chicken
1 stick butter
1 cup all-purpose flour
1-1/4 teaspoon baking powder
1 cup milk
1-1/2 cups white melting cheese, shredded (White American or cheddar, Fontina, Provolone, Swiss)
1 cup sautéed yellow onion, chopped
1 cup sautéed celery, chopped
2 cups chicken stock (saved from boiling chicken)
1 can cream of onion soup
1 teaspoon sugar
1/4 teaspoon dry sage
1/4 teaspoon cayenne pepper
Fresh cracked pepper and sea salt to taste
Cook one chicken by boiling in water, remove from pan, save stock. Remove skin and bones; shred the chicken into pieces. Melt the butter and pour into the bottom of a 9 x 13 inch baking pan. Shred the chicken and spread it on top of the butter; salt and pepper the chicken. Place celery and onions over chicken and top with cheese. In a separate bowl, whisk together the milk, baking powder, and the flour; slowly pour that over the chicken. Do not stir. Whisk together the chicken stock, sugar, sage, cayenne, salt/pepper, and soup; pour that over the flour and milk mixture. Do not stir. Bake uncovered in a preheated 400 degree oven for 35 to 40 minutes, or until top is light golden brown.

Chicken and dumplin's - haven't had those in a coon's age. Heading to the cabin with family this weekend, maybe my mom will be making hers.
