Gorgonzola Sauce for Potato Chip Dunking or Served on Filets - You're Gonna Drool Over This!

I first had a dip similar to this with homemade chips at one of my favorite Nashville restaurants. I didn’t think it would be hard to make and it wasn’t. It’s really uncontrollably good and the cheesy sauce with the salty chips is over the moon. Of course it’s always the crowning jewel atop a perfect filet.
2-1/2 cups cream (or half and half)
4 ounces Gorgonzola, crumbled
3 tablespoons butter
 4 tablespoons all-purpose flour
3/4 teaspoon sea salt
3/4 teaspoon freshly ground pepper
Dash of garlic powder
Dash of cayenne
Melt butter over medium-high heat in a medium pot. Once melted, add flour and whisk. Cook until flour turns a light brown color, probably 4-5 minutes. Slowly whisk cream into roux. Turn heat down to low and simmer until thickened, about another 4-5 minutes. Stir in Gorgonzola and remaining ingredients; adjust seasonings to taste; keep warm until needed. Serve over warm homemade potato chips and garnish with salt and chopped chives. Or serve on filets cooked to your liking and garnish with chopped parsley.

I prefer gorgonzola over most blue cheeses and it goes great with beef like you mentioned. This sauce sounds great!
