Ambrosia
This traditional Southern salad takes its name from
what was called the ‘food of the gods’ in Greek mythology. It is typically
served chilled in a crystal or glass bowl and has long been a Southern staple,
especially at holidays.
3 medium oranges, peeled, sectioned, and chopped
or 2 cups mandarin
oranges, drained
2 large bananas, peeled and sliced
1 large can crushed pineapple, drained
1/4 cup honey
1 tablespoon fresh lemon juice
3/4 cup sour cream
3/4 cup whipped cream
1 cup miniature marshmallows
1 cup flaked coconut
Combine orange slices and banana slices. Combine the honey
and lemon juice; pour over fruit. Add remaining ingredients and stir gently to
mix. Refrigerate overnight. Gently toss before serving and sprinkle with
additional coconut for garnish if you like.
