Company's Coming Chicken 'n Cheesy Hash Brown Bake
When family and friends gather during the holidays, or at anytime during the year, this is one of the easy to make and serve recipes we use. It's quick, delicious, and pleases children and adults alike. Have it made when eveyone arrives an slip it in the oven - everyone loves to the smell of good things cooking in the kitchen. Serve this with a salad and you've got a great meal.
1/2 teaspoon pepper
4 cups chopped cooked chicken
1 cup sour cream
2 cups chicken broth
1 cup Cheese Whiz
1 can cream of chicken soup
4 tablespoons chopped onions
2 tablespoons red bell pepper, diced (optional)
1 can French’s fried onions or 1 cup corn flakes
1 cup cheddar cheese, shredded
Thaw hash browns overnight in refrigerator. Preheat oven to 350 degrees. Layer in an ungreased 9x13 inch pan. Sprinkle with salt and pepper. Place chicken over the hash browns. Stir together sour cream, broth, soup, onion, Cheese Whiz, red pepper; pour over all. Bake uncovered for 50 minutes or until heated through. Top with cheese and onions or corn flakes and bake another 10 minutes to a golden brown.
NOTE: I'm one of those cooks who is bound to add what ever is left over or in the cabinet to a recipe from time to time. Often I add mushrooms and a little garlic to this.
