No Bake Chocolate Oatmeal Cookies – the secret to the creamiest holiday treats ever!

This is one of the first recipes I ever made. The secret is to make sure the sugar is completely dissolved before you add the peanut butter and the oatmeal to use is the quick cooking variety. Also crunchy peanut butter will cause them to be drier. Some recipes call for different proportions of butter and sugar, but I think this is perfect.
2 cups sugar
4 tablespoons cocoa powder
1/2 cup butter
1/2 cup milk
1 cup peanut butter
1 tablespoon vanilla
3 cups quick-cooking oats
In a medium saucepan, combine sugar, milk, butter, and cocoa. Bring to a boil, and cook for 1 to 1-1/2 minutes. Remove from heat, and stir in peanut butter, oats, and vanilla. Let the mixture stand for 10 minutes, stirring occasionally to let the oatmeal absorb some of the liquid. Drop by teaspoonfuls onto wax paper. Let cool to set at least one hour. Store tightly covered at room temperature.

My Great Aunt Mary, a fabulous home cook, made these for us when we were just children. They were our favorites and remain so today! Her's were always perfect. The chocolate, peanut butter, oatmeal combination just can't be beat. :)
