Mild Yellow Peppers stuffed with Brown Sugar Meat Loaf
Just shut the front door and set the table! This is a
wonderful way to get some extra vitamin C as yellow peppers contain more than
oranges! These peppers have a slightly fruity taste, much tamer than their
green cousin and are rich in Vitamins A, C, and Beta Carotene. You might just
think you don’t like peppers if you haven’t tried them stuffed with everyone’s
favorite – homemade meatloaf.
2 large yellow bell peppers
1 pound ground beef
1/4 sleeve of crackers, finely crushed
1 large egg
1 teaspoon Worcestershire
1/8 teaspoon cayenne
1/8 teaspoon garlic powder
1 teaspoon prepared yellow mustard
1/4 cup brown sugar
1/4 cup ketchup
1/2 sweet yellow onion, finely chopped
Sea salt and fresh grated pepper to taste
Mix all the above ingredients together, except the
peppers, (dig in with both hands.)Blanch peppers for 1 minute to 1-1/2 minutes
by placing them in a pot of salted boiling water. Remove with tongs and place
in bowl of ice water to shock and stop cooking process. Cut peppers in half,
down through the stem; remove the core, seeds, and if desired the ribs. Stuff
each half of the peppers with 1/4th of the meatloaf mixture.
Place into a baking dish sprayed with no-stick spray;
cover with foil. Bake in a preheated 350 degree oven for fifty minutes. Prepare
topping while baking by mixing 1 cup ketchup, 1/4 cup brown sugar, and a dash
of cayenne.
After baking, drain grease out of the pan. Spread topping over meat stuffed peppers. Place
pan back in the oven uncovered to bake for an additional 15 minutes. Remove
from oven, serve and enjoy.
