Pineapple Fritters are little nuggets of sweetness with the surprise of pineapple in every bite!

Pineapple Fritters
Little nuggets of sweetness with the surprise of pineapple. This are a fun addition to any meal when you want to serve a little bite of something sweet.  A restaurant in my hometown has been serving these on their buffet for many years – it’s their signature item actually.
1 extra-large egg, beaten
1 cup milk (scant)
5 tablespoons sugar
Dash of salt
2-1/2 teaspoons baking powder
2 tablespoons butter, melted
2-1/2 cups flour to make stiff batter
1 cup pineapple, crushed and drained
 Combine in order given. Add pineapple to batter last. Drop a tablespoonful at a time in hot oil to deep fry. Don’t crowd the fritters and fry only 2 – 3 at a time for about 2 minutes. Remove from fryer to paper towel to drain; dust with sugar and allow to rest for a few minutes. If you prefer you may wait and dust later with powdered sugar.  Serve warm or at room temperature.
