Easy and Bodacious Bolognese Sauce and Pasta
You’ll think you’re in Italy as this recipe cooks and
smells up your kitchen. Serve with a salad and you’re done.
1 tablespoon olive oil
4 slices bacon, cut into 1/2 inch pieces
1 large yellow onion, minced
1 clove garlic, minced
1 pound ground beef
1/2 pound Italian ground pork
1/2 pound fresh mushrooms, sliced
2 carrots, shredded
1 stalk celery, chopped
1 (28-ounce) can Italian plum tomatoes
6 ounces tomato sauce
1/2 cup red wine
1/2 cup chicken stock
1 teaspoon fresh basil, chopped
1 teaspoon fresh oregano, chopped
Sea salt and fresh ground pepper to taste
1 pound pasta
In a large skillet, sauté bacon, when done, remove from
the pan and set aside. Add the onion, celery, and carrots to the same pan and
add the olive oil if needed; cook stirring frequently until done; when they are
soft, add the pork, beef, and garlic and cook till browned. Drain off excess
fat. Stir in bacon, mushrooms, tomatoes, tomato sauce, wine, stock, basil,
oregano, salt and pepper to saucepan. Cover, reduce heat and simmer 2 – 3 hours,
stirring occasionally.
Bring a large pot of lightly salted water to a boil. Add
pasta and cook for 8 to 10 minutes or until al dente; drain. Serve sauce over
hot pasta. You may top with shredded Asiago or Parmesan cheese if you like.
