Hickory Smoked BBQ Sandwich with Red Slaw - a regional recipe garnering national attention!

 Red Slaw on a Hickory Smoked BBQ Sandwich
This is a regional recipe which is favored in parts of North Carolina, Kentucky, and rural West Tennessee. It's magic on a BBQ sandwich! A visiting chef tasted it for the first time on a swing through Tennessee and is now serving his version of it on a duck taco at a hunting lodge in upstate New York. 
1 large package shredded coleslaw
12 ounces ketchup (about half a bottle)
1-1/2 cups water
1/2 cup sugar
1/2 cup vinegar
Salt and pepper to taste

In a saucepan, mix all the ingredients, except for the coleslaw; bring to a boil and cook to thicken.  Remove from heat, allow mixture to cool and pour the sauce over the coleslaw in a large bowl. Stir to mix well, cover and refrigerate until time to serve. Bill Magers, JFD Retired (1972 – 1997)
