For the love of Jack! Pass the appetizers, shut the front door and kiss the cook.
12 ounces white cheddar or white American cheese
½ cup fresh grated Parmesan cheese
4 ounces smoked Gouda
1 small jar diced pimientos, with juice
6 tablespoons mayonnaise (I use Duke’s)
1 - 2 tablespoons Jack Daniel’s Gentleman Jack Tennessee whiskey
Splash Worcestershire sauce
1/2 teaspoon chili powder
Pinch ground cumin
Grate the cheeses by hand. Add the rest of the ingredients and stir lightly to mix. Refrigerate for an hour or even better overnight, before serving.
Spread pimento cheese onto a think piece of cocktail bread such as Pepperidge Farms or your favorite bread, top with pepper jelly and crumbles of hickory smoked bacon. Note I make my pepper jelly and you can use any kind you prefer – store bought or homemade. Also serve on crackers or toasted bread and top with toasted pecans if you prefer no meat.
