Blue Cheese Dunking Sauce for Home Made Potato Chips or to serve atop a Hickory Smoked Filet of Beef

This creamy blue cheese sauce is addicting as a dunkin sauce for warm homemade potato chips or for a filet. It will bring raves from your guests! If you don't want to make the potato chips, you can warm the store bought variety in the microwave or in the oven and it's oh so good. I beef filets from Darrell Hicks of Hicks Smoked Meats (Cajun Cookers in Jackson TN) that were smoked on a hickory pit and it was one of the best dishes I've served. Even those who will tell you that they don't eat blue cheese will lap this up! Enjoy! With the beef, I suggest you try one of my favorite Cabernets - my all time favorite is Cakebread but I also like Humble Pie Cabernet Sauvignon and suggest you give it a try!
