I've never made this with Rotel. I'm going to try it, because living in Texas there is always Rotel in my pantry! Thanks for bringing back some wonderful memories. When daddy moved us up North, this was one of the things that I missed most about Grandma's house. That and Sug's pulled pork BBQ (which Grandma used to have shipped to us because she felt so sorry that we couldn't get it!) Have a wonderful week. Kathy

Pimento cheese with Rotel......I don't need to read any further to know this is wonderful. Someone mentioned homemade mayo. My mother always made her own mayo so I grew up with pimento cheese made with homemade mayo. Those were the days.

Libby-The casserole looks great. I agree about grating the cheese yourself for pimiento cheese--the bag cheese never produces the right texture.
